Finally, here is my home-made, chicken pot pie recipe. This recipe is fabulous for the following reasons:
· It’s cheap! Probably 5$/pie
· It’s healthy- very low-fat, and about 200 calories per serving (if you cut it into 6th’s, but I think it’s more like 4 people realistically. Depends on if you are serving alone or with a side dish)
· It’s easy. It takes like 5 minutes of prep, with very few ingredients.
· It’s a crowd pleaser. I made this for my roommates and the first time there was no leftovers. The next time I made extra and everyone took it for lunch the next day.
I looked online for some ideas then came up with this recipe to make it my own. I am giving you the recipe that turned out the most satisfying, and you can either add your own additional vegetables or take out the ones I chose to put in.
Ingredients: (1 pie: Serves 4-6)
· Unbaked pie crust
· 1 can cream of chicken soup
· 4-5 cooked chicken tender (you will cook these before placing in pie
· Bisquick
· Vegetables:
-mushrooms (loved adding these)
-corn (I used can, but frozen works too)
-1 bag of frozen peas and carrots (mixed)
- Cook the chicken through or almost through. No seasonings, etc.
- In empty pie crust, place chicken and vegetables and cover with cream of chicken soup.
- Mix bisquick and pour over the entire pie covering the surface.
Done! How freaking easy was that!!!
