Mexican Quinoa

I have just discovered Quinoa and love it! It is SO healthy and so incredibly easy to prepare.  I would describe Quinoa as a mix between rice and pasta, yet it is gluten free and not even a grain, but actually a seed! It is described as the "grain" with the most protein and absolutely the healthiest for you.  AND it actually tastes great!  I have made up a few recipes with it and plan to try some more soon.  For now, here is the best recipe I have created for Quinoa through looking through random recipes and trying new things.





Mexican Quinoa


Quinoa (prepare as directed on box)
Taco Seasoning
1 can Black Beans
I can of Corn
Green Bellbepper
Tofu (optional: Chicken, beef, etc.)
1 cup of Cheddar Cheese (Dairy or Vegan)
Hot Sauce of your choice (I like Frank Red Hot)

1. Prepare QUINOA as directed for 4 servings. While cooking, add in TACO SEASONING and let Quinoa cook with seasoning.

2. In a seperate pan, mix the TOFU, BLACK BEANS, CORN and BELL PEPPER with a little bit of olive oil and/or butter and let it cook. Season however you like.  I add dried basil or oregano. Add in HOT SAUCE.

3. When Quinoa is done cooking, mix in the vegetables, tofu (hopefully you got it a bit browned) and stir.  Add more HOT SAUCE.  Melt in CHEDDAR CHEESE.
